Pulses are the dried seeds of pod-bearing plants of the Legumiosae family. They are rich in protein, iron, calcium and B vitamins. They are high in fibre, but contain virtually no fat, making them the nutritionists' dream food.
Brown/Red lentils are used in soups, stews, bakes, salads and sauces for pastas. They cook quickly. Use one cup of lentils in three cups of water.
In dry storage pulses will keep for many years, but they become drier and harder by the time.
